I made an 'alternate' version of this casserole. Rachel friend from work, made a 'modified version'. For those who know about the various versions of TAKS tests, this is a play on words. She orignally modified it for what she had in her pantry and I did the same. So feel free to do this as well!
San Antonio Squash Casserole
2 large squash-cut up and boiled til just tender
1 can rotel drained (Rachel used a cooked down onion and a can green chilis)
1 can cream celery soup
2 cups cheese (I didn't use this)
Mix and heat in oven til bubbly. (350)
Ten minutes before serving sprinkle top with bread crumbs and bake til golden.
